Sweet Peas with Braised Lettuce Recipe

Here's a perfect side dish for Thanksgiving or any meat, fish or poultry dinner. The peas and lettuce are lightly seasoned with herbs for a mild vegetable side dish that complements any entrée.

Ingredients

    • 1 Tbsp canola oil
    • 1 Tbsp trans fat free margarine
    • 1 Tbsp finely chopped shallot
    • 1 tsp finely chopped garlic
    • 1 Tbsp all-purpose flour
    • 1 cup low sodium vegetable stock
    • 1 bag (16 oz) frozen sweet peas
    • 1 tsp chopped fresh mint
    • 1 tsp chopped tarragon
    • 1 tsp chopped dill
    • 1/4 tsp white pepper
    • 1 head Bibb lettuce, leaves separated, washed and torn

Preparation

    • In a skillet, heat canola oil and margarine over medium heat until margarine melts. Add the shallot and cook for 1 minute. Add the garlic. Cook for 1 minute. Sprinkle flour over the shallot and garlic and stir and cook for 30 seconds.
    • Add stock and bring to a simmer until it thickens. Add peas and toss to coat. Add the herbs and pepper and cook for 3 to 4 minutes.
    • Add lettuce leaves, stir, cover skillet and remove from heat. Let the lettuce wilt for 2 to 3 minutes. Serve immediately.
